Shrimp and Melon Salad

1 lb. Shrimp, cleaned
1 Medium Cantaloupe, cut into pieces
2 Cups Arugula
1/2 Cup Candied Walnuts
4 Tbsp House or Italian Blend Olive Oil (available exclusively at The Spice Rack)
4 Tbsp Citrus Champagne Vinegar (available exclusively at The Spice Rack)
Salt & Pepper to taste

In a medium size bowl, combine 1 pound of cooked, cleaned shrimp, cantaloupe pieces, arugula and walnuts. Toss gently. Add the olive oil and vinegar, mix well and serve.

Pairs well with grilled salmon, grilled chicken or as a simple dinner salad.
